Crispy Onion Rings and Dipping Sauce

They've got that crunch, that hint of onion and believe me, you can't get enough of these. The good news is once you learn how to make them, you can enjoy them anytime you like.  These are easy to make, the hardest part is dipping them in the batter and flour mixture and that requires no skill at all. Ingredients
    Ingredients
  • 1 yellow or white onion, 1/2" slices
  • 1 vegetable or Canola oil
  • cooking thermometer
  • Flour Mixture (Breading)
  • 1 1/2 cup all-purpose flour
  • 1/4 cup corn starch
  • 3 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp paprika, optional
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • Milk Mixture
  • 1 cup milk
  • 1 tbsp lemon juice
  • Dipping Sauce
  • 1/4 cup mayonnaise
  • 1 tbsp sour cream
  • 1 tsp Tabasco
  • 1/2-1 chipotle pepper, minced
  • 1/8 tsp paprika
Instructions
  1. Slice your onion ½” thick. Set aside.
  2. Flour Mixture
  3. Combine flour, cornstarch, salt, baking powder, paprika, black pepper and garlic powder in a small mixing bowl.
  4. Milk Mixture
  5. Combine milk and lemon juice and set aside for 5 minutes until slightly thickened. (Note: You can substitute buttermilk for the milk and lemon juice)
  6. Breading the Onion Rings
  7. Place one onion ring into the milk mixture then remove with a fork, shaking off any excess liquid. Drop it into the flour mixture and using a second fork, coat it with flour. Repeat this step! Place the onion ring back into the milk mixture and then into the flour mixture for a second time. Note: This is very necessary if you want the best results. Dredging the onion in the flour mixture only once will give a thin coating and once it’s fried the onion will not be completely covered. Repeat this step for the rest of the onion rings.
  8. Pour 2-3 inches of vegetable or Canola oil into a deep skillet approximately 4-inches deep. Heat oil to 350-360°F. (Do not overheat or the outside of your onion ring may burn.)
  9. Frying the Rings
  10. Place about 4 onion rings into the hot oil. Fry for about 1 – 1.5 minutes or until golden and flip the onion rings to cook on the other side for about another minute or until golden. Once they have finished cooking, remove them and place on a cooling rack. (Note: You can also place your cooked onion rings into a 200°F oven to keep warm.)
  11. Dipping Sauce
  12. Combine the mayonnaise, sour cream, Tabasco, chipotle pepper and pepper in a small bowl or use an immersion blender to thoroughly combine the sauce ingredients. (Note: The chipotle pepper does not make this dip spicy. Cans of chipotle peppers can be found in the Mexican food aisle of your grocery store)
